Variations
One of the best things about this homemade rice pilaf recipe is how easy it is to customize depending on what you are serving. Here are a few simple ways to change it up:
Make it herby – fresh parsley, dill, basil, or chives add brightness and fresh flavor. Sprinkle herbs over the rice just before serving.
Add Vegetables – Stir in peas, finely diced carrots, mushrooms, or celery for flavor and texture. Frozen peas can be added during the last few minutes of cooking.
Aromatics – add in 1/2 cup of diced onion and or 1-3 cloves of garlic minced. Do this right before adding the rinsed rice, brown the orzo then add aromatics, then add rice saute for a few minutes before adding your liquids for added flavor!
Nuts – Toasted slivered almonds or pine nuts give rice pilaf a delicious crunch and make it feel a little extra special for holidays or dinner parties. Add them at the end, and fluff them in with a fork.
Use a different liquid – Chicken broth gives this rice pilaf rich flavor, however vegetable broth or vegetable stock works great for a vegetarian version. You can also use water.
Add warm spices – Try adding garlic powder, onion powder, turmeric, cumin, or a pinch of cinnamon depending on the meal you are serving alongside it.
Make it a meal – Add shredded chicken, cooked shrimp, or leftover grilled vegetables to turn this easy side dish into a simple main course.

Yes! At first I was worried that I “burned” it, but it turned out even better with the crunchy layer 🙂
Dude. This rice is awesome. I have struggled with my relationship with homemade rice for many years. It’s always either gooey or dry when I make it. I have found a keeper in this rice. Who knew? My family loved it as well. Once again, thanks for a brilliant, simple recipe Sheila!
Nikki, Glad it worked out for you ; )! I think I failed to mention the possibility of a crunchy layer on the bottom of the pan…did you get this with yours? It’s my favorite part! Luv U! Thanks for your support of E2g! Sheila
This looks so much better than the rice-a-roni I grew up eating! 🙂
Ha I forgot about that stuff…now I won’t be able to get the tune out of my head! ; )
My daughter loves rice & could live on it I’m sure. I never thought of mixing it with Orzo, good idea!
We love plain ol rice too! But you are right this is nice for a change of pace.
This sounds so good. I usually turn to a baked potato in the microwave. I’ve tried quinoa recently. This is a nice change.
Oh I am SO all over this! Mmmm!
That’s a great side idea! I usually have no problem planning the main dish, but then forget the sides. Will try this!
It’s hard to pull it all together isn’t it?! Especially when evenings are busy. I like sides that you can quick whip up and forget about while you put the rest of dinner together.
