Whether you’re serving pulled pork, burgers, grilled chicken, or ribs, this fresh cole slaw is a great way to add color, crunch, and bold flavor to any meal. Gather your list of ingredients, grab a large mixing bowl, and let’s make a side dish your whole family will ask for again and again.
Why I love this Spicy Ginger Coleslaw
This recipe is so versatile. It can be used on tacos, piled high on a pulled pork sandwich. Served along side burritos, enchiladas, or your favorite quesadilla. I love to serve it with my Hawaiian Hamburgers or with BBQ Ribs. It makes the perfect side. This recipe doesnt really have any great family history or story to go along with it other than it has been eaten many times by family and friends that have gathered around our table, and I know it has become a favorite recipe for many friends and family. It really isn’t that spicy, unless you want it to be then you can easily kick up the heat with cayenne pepper, or red pepper flakes. I hope you give this recipe a try and enjoy it as much as we do!

This recipe is packed with flavor and gives a boost to any menu. It’s not so spicy that it will turn people away…don’t even warn them, I have never had anyone complain that this slaw is too spicy. However, you can always turn up the heat if you prefer!
Gather these ingredients
How to make Spicy Ginger Coleslaw
This recipe comes together so easily. It does require prepping a few fresh ingredients, and a little whisking. I think you can handle that.
- Add shredded cabbage, julienned apple, red bell pepper, and carrots to a large mixing bowl.
- In a small bowl add all the ingredients for the fresh ginger dressing and whisk. Give it a taste, if you think it needs more salt or more heat feel free to add more spices to your liking.
- Now pour the dressing over the fresh fruit and vegetables, toss to combine.
- Place in an airtight container in the refrigerator for 30 minutes before serving. This helps the flavors mingle. But I you don’t have time to wait, no worries it will still be delicious if you serve it straight from tossing to table.

Frequently Asked Questions
Can I make this coleslaw ahead of time?
Absolutely! In fact, it’s even better after chilling for 30 minutes to an hour. The cabbage mixture softens slightly while still staying crisp, and the ginger dressing has time to soak into all the slaw ingredients. I would avoid making too far in advance (for example the day before0 because the slaw will loose it’s crunch.
Can I use bagged coleslaw mix?
Yes! Using a bag of shredded cabbage and carrots is a great way to save time. Simply add the apples and peppers before tossing everything together.
How should I store leftovers?
Store leftover cole slaw in an airtight container in the refrigerator for up to 3 days. Give it a quick stir before serving. It will loose it’s crunch but it is still delicious and full of flavor.
Can I make the dressing in advance?
Yes. Whisk the dressing together in a small bowl and refrigerate it for up to 3 days. When you’re ready to serve, toss it with the vegetables in a large bowl. This is the perfect way to prep this side dish ahead of time.
What makes this recipe different from traditional coleslaw?
Unlike traditional coleslaws, this recipe skips the heavy dressing and instead uses a fresh ginger vinaigrette-style dressing. The result is a lighter, brighter side dish that’s packed with fresh flavor while still being creamy enough to satisfy fans of traditional creamy coleslaw.
Variations
One of my favorite things about this recipe is how easy it is to customize using ingredients you already have on hand. Here are a few new twists to try next time you make it.
- Turn up the heat. Add a pinch of cayenne pepper or a finely diced jalapeño if you enjoy a spicier slaw.
- Make it sweeter. Swap the honey for maple syrup or sugar if you don’t happen to have honey on hand.
- Add more vegetables. Toss in thinly sliced red onions, shredded purple cabbage, or extra red pepper for even more color and crunch.
- Save time. A bag of prepared vegetables or coleslaw mix makes this recipe come together in minutes while still tasting homemade.
- Love extra crunch? Stir in toasted almonds, sunflower seeds, or chopped peanuts just before serving for extra crunch.
I hope this Spicy Ginger Coleslaw becomes one of those recipes you reach for again and again. It’s fresh, colorful, and the perfect companion to backyard barbecues, weeknight dinners, and potluck gatherings. If you give this wonderful recipe a try, I’d love to hear what you think!

I just love her Dr. Pepper pulled pork, and her Spicy one she had in her first book. That is my go too for everyone. I love both, but hubby likes the other one because it is less “spicy”. I am going to cut the peppers in the dr pepper one. He loves the taste, but is a very mild man.
So I guess I need to make this pulled pork you speak so highly of. And I love a good slaw…it’s printed off! Have a great week, Sheila!
Now I’m on Internet Explorer, very nice…Firefox not so much 🙁
I’ve made that recipe – though for me it didn’t taste any different than my homemade bbq sauce without the Dr. Pepper – maybe I’m just awesome, ha ha! I LOVE coleslaw on my BBQ sandwiches 🙂
BTW – Your new blog design? is not working for me on Firefox…am I the only one?
