Mango and Avocado Salad

I love Mexican food!  Cinco de Mayo for me is the perfect opportunity to celebrate freedom and democracy with some good eats!  And what better way to start than with this beautiful salad/dip.  If you wanted to make this more of a dip, you could definitely smash up the avocado more, but I chose keep the ingredients chunky and I  served it as a side salad to my empanadas. (recipe coming soon!)

 

Mango and Avocado Salad is really so versatile and easy to make!

 

Mangos can be tricky to cut up if you never have cut one up before.  I used to avoid them like the plague, but once I took the time to figure out the correct way to do it, and how to avoid that big nasty pit they are really easy to cut up.  Check out the post I did on the right and wrong way to cut up Mangos, HERE ; )

So many great ways to eat this salad, I love it on the side as a salad but I also like to dip a chip or two…three or four into it.  Oh then there is the luverly use of topping off your fish taco with Mango and Avocado Salad!  This way might just be my favorite.  Tasty and toolicious for sure!

Here is the recipe…hold on to your hat this one is going to blow your mind it’s so quick and easy.

Mango Guacamole Salad
1 ripe Mango, diced small
2 Avocados, diced small
2 Limes, juiced
1/2 small Red Onion, cut into thin slices
1 tablespoon Jalepeno Pepper, minced
3/4 teaspoon Kosher Salt
1/3 cup finely chopped Cilantro

Mix all ingredients together in order. Taste, add more salt or lime if you prefer. Serve with chips, on tacos (it’s especially good on fish tacos), or as a side salad.

I love dishes that can be used in multiple ways.  Especially as we move into the summer months and life gets busy…in a good way.  BBQ’s, days at the beach or poolside who wants to be inside hassling with a complicated meal?!  Not I said the fly.

Make a double batch of this salad to have on hand for a delicious refreshing side.  Here is another idea….

Mixed Greens + Mango and Avocado Salad + Grilled Chicken sliced = Fantastic Fresh Dinner!

How would you eat this salad?….by the spoonful?  Been there done that!
