Sausage and Egg Breakfast Sandwich
We all love a sausage and egg breakfast sandwich from that one restaurant on every American highway exit, but what if we could have it at home, anytime we want, and we have control over the quality of the ingredients? These breakfast sandwiches come together quickly and are easy to have on hand in your refrigerator or freezer for breakfast or for that kid who is starving when they get home from school or practice.

Why I love breakfast sandwiches so much
I now have two teenagers living under my roof. In four years, I will have four teenagers under my roof. During that time, if you are unable to locate me, you might want to check the darkest corner of my home; there you will find me curled up like a cheerio and sucking my thumb, making strange grunt/humming noises. If you are the lucky one to see me in this state, please pick me up by my stretchy pants and smack me hard across the noggin. Teens eat a lot, at all hours and nonstop. Did I say teenagers think money grows on trees and stopping at fast food restaurants at all hours of the day is free and expected? Can we stop at Wendy’s, Qdoba, or McyD’s? The funny thing is we have never been a family that eats at fast food restaurants. So why do they think filling their bodies with greasy, calorie-ridden food is the norm in this family? That’s why I decided to make the sausage egg sandwich at home this summer. It’s my oldest favorite. The best part is that you can make several at a time, store them in the refrigerator, and warm them in the microwave. You can also freeze them!

How to make this hearty breakfast sandwich
Start by frying your breakfast sausage in a skillet. Flatten out with the back of a spatula and cook until crispy around the edges. Remove to a paper towel-lined plate and set aside.
Fry or scramble eggs over medium heat. I like to do one at a time, but you can do multiple eggs at a time if you have a big enough pan. How you cook your egg is completely up to you: fried egg, fluffy egg, egg with runny yolk. If you have one of those fancy egg cooker contraptions that cook eggs into perfect egg rounds, by all means, use it!
Toast English muffin halves in your toaster or toaster oven. I toast my English muffins while I cook the eggs and fry the sausage. Multi-tasking makes it possible to make four or more sausage breakfast sandwiches in very little time.
Breakfast sandwich assembley: line up toasted english muffin halves, sausage patties, egg patty, and slices of cheese. Everyone has an opinion on where to put the cheese, I start with a slice of cheese, then add the sausage patty, egg round is last, top it off with second half of the english muffin.
Tips & FAQs
- Q: What is the best sausage to use? A: I use pork breakfast sausage. However, a chicken sausage patty or turkey breakfast sausage is also a great option. Sometimes, I buy bulk breakfast sausage from my local butcher and make sausage patties. You can also substitute bacon, Canadian bacon, or deli meat.
- Q: I don’t care for American cheese. Is there another cheese you would suggest? A: American cheese is the most authentic cheese for this sandwich, but any melty cheese will work. You could use provolone, Monterey jack, or cheddar. You can’t go wrong if the cheese slice melts nicely over the sausage and egg.
- Freezing: Allow sausage and egg breakfast sandwiches to cool completely, then wrap them tightly in plastic wrap and place them in a freezer-safe bag. You can fit several sandwiches in a gallon-size Ziploc plastic bag.
- Refrigerating: Use the same method as freezing. Allow to fully cool before wrapping in plastic wrap, then place in a zip-lock bag or wrap individually in aluminum foil.
- Heating instructions: If a sandwich is frozen, remove the wrapping and allow it to thaw. However, you can place it in the microwave, use defrost mode to thaw, and then reheat it on high for 1 minute. If taking sandwich straight from the refrigerator, remove wrapping and place in microwave for 1 minute on high to reheat. Times may vary depending on your microwave. Frozen sandwiches are great for lunches because when lunch rolls around, your sandwich should be thawed, and you can pop in the microwave at school or work.

Sausage & Egg Breakfast Sandwich
Ingredients
- 6 whole English muffins
- 6 sausage patties approximately 1.5 ounces each
- 6 slices american cheese
- 6 whole eggs
- 1 tbsp butter for frying the eggs
Instructions
- Slice and toast english muffins.
- Fry sausage in pan, pressing it flat with the back of a spatula, fry until cooked through and crispy around the edges.
- Cook each egg to your preference. Soft scrambled, scrambled, fried, or poached.
- assemble: place cheese, sausage, and egg on the top half of the english muffin, place bottom half of the muffin on last. Flip over. Wrap tight with plastic wrap and place in a zip loc bag. Store in refrigerator for 4 days. Freeze for up to 3 months.
- reheating: allow sandwich to thaw, and reheat for 1 minute on high.

I really enjoy reading your blog, I laughed out loud on this particular one. I can so relate to living in a teenagers world. I have to say that most of the time I feel as though I am trying to survive on foreign turf. Two things I know, somehow, someway we will make it through this time in our lives and I have a new appreciation for my mom every day. I figure if she survived raising 4 girls, there must be hope.

I have to admit..I am terrified of the teenage years. Mostly because my mamma has been praying that my girls are just like me! Not nice MOM! So, because you will have been through it with three of your own and feel lonely without all the chaos around, I will be sending my gals to your house. I would prefer to have them back when you have them all straightened out and have the hormones in line….say by young adulthood. My kids LOVE chicken nuggets (they are 6 and 3) and I am in search of a recipe for homemade ones that taste as good as chick-fil-a. Any ideas? Most of the time they are happy with cheese burgers, and homemade is so much better then fast food.

Oh Chicken Nuggets are a hard one. My kids love friend chicken so I have done it with the boneless chicken tenders, but anyway you look at it they are just plain unhealthy. But oh so yummalicious!
