Homemade Brownie Batter Ice Cream

If you’re a serious chocolate lover, this homemade brownie batter ice cream is about to become your new favorite dessert. This rich, velvety homemade ice cream starts with a decadent dark chocolate ice cream base made with heavy cream, cocoa powder, eggs, and pure vanilla extract. After you churn ice cream in your favorite ice cream maker, every scoop tastes like ribbons of brownie batter folded into the creamiest chocolate ice cream imaginable. In fact, that’s exactly how this recipe got its name—after my son took one bite and declared, “Mom, it tastes like brownie batter!” One taste and you’ll be saying, holy cow, this is sooooo good.

Please tell me you like brownies.  Please say that you eat spoonfuls of the batter when you make them.  If you said yes to either of these questions you are going to fall flat on your face for this ice cream.  This rich chocolate custard is definitely moan worthy. We just flat out love chocolate around here, so my pursuit of developing the creamiest, dark chocolate ice cream was born out of necessity. Could this be more chocolatey? Yes. Could I have kept going to make this an even deeper, darker, chocolate ice cream? Well, yes I could have. But when I got the reactions I did from this variation of the recipe, I decided to just throw in the towel and call it good. Why mess with deliciousness. I hope you enjoy it as much as we do!

  • Heavy Whipping Cream
  • Half and Half
  • Vanilla Extract
  • Hershey’s Special Dark Chocolate Cocoa Powder
  • Chocolate Chips

Lets get started making this extra indulgent brownie batter ice cream!

Start by adding eggs and egg yolks to a medium sized bowl or to the bowl of a stand mixer. Add granulated sugar to eggs.

Next add cocoa powder to the eggs and sugar.

Whisk eggs, egg yolks, sugar, and cocoa powder together until light and fluffy, about 3 minutes. If you are doing this by hand it’s a good arm work out. Using my stand mixer or hand mixer would have been an easier choice.

Add half and half, and heavy whipping cream to a saucepan bring dairy to a simmer or low boil. Add pure vanilla extract. Next you want to work fast because you need to temper the egg chocolate mixture. You need pasteurized egg yolks, so adding the warmed milk slowly to them will cook them without making scrambled eggs. You are basically making a pudding without flour or corn starch.

Tempering the egg mixture with the hot cream, can be tricky.  Just be sure to go slow, and never stop mixing.  Remove 1 cup of hot cream, slowly drizzle cream into egg chocolate mixture and whisk vigorously.  Never stop mixing, as you slowly add the hot cream to the chocolate, continue until you’ve added about have of the hot cream.  .

After you have half of the hot cream whisked into the chocolate, turn around and pour the tempered chocolate into the remaining hot cream mixture, once again stirring non-stop.

Continue to whisk over medium-low heat.

At this point you can stir in the dark chocolate chips. I like to use at least 60% cocoa chips if you can get higher thats better. Sometimes I find 70% cocoa chips or of course you could use a dark chocolate bar chopped up. Continue to stir for 5 minutes or until custard is thick, and coats the back of a spoon.

Allow brownie batter ice cream base to cool completely and place it in the refrigerator until it is cold. This could take 24 hours. Once the ice cream base is cold, it will be quite thick, place it in your ice cream make and let the ice cream make do it’s thing.

Remove from your ice cream maker and place in a freezer safe shallow container. Shallow because this will allow your ice cream to freezer evenly. If you put it in a container that is too deep the outside will freezer sooner than the inside…get what I’m saying. Although you could just serve it right up before you ever put it in the freezer, it might be a little soft, but who cares!

One thing you’ll notice is that real homemade ice cream melts faster than store-bought brands. That’s because it isn’t loaded with stabilizers (as guar gum, or soy lecithin )or artificial ingredients—just creamy goodness and the perfect flavor.

Making homemade ice cream is easier than you might think, and these simple tips will help you achieve the creamiest results every time.

  • Start with a thoroughly chilled ice cream base. Let the custard cool completely, then refrigerate it for several hours or overnight before adding it to your ice cream maker.
  • Freeze your ice cream maker bowl completely. If you’re using a freezer bowl model, make sure it’s frozen solid before you begin to churn ice cream.
  • Use quality ingredients. Real heavy cream, skim milk, pure vanilla extract, and good cocoa make all the difference. There are no corn syrup necessary, no soybean oil, or guar gum here—just simple ingredients that create incredible flavor.
  • Don’t over-churn. Once your homemade ice cream reaches a soft-serve consistency, transfer it to an airtight container.
  • Cover the top of the ice cream with plastic wrap before placing the lid on the container. This helps prevent ice crystals from forming.For the best texture, allow the ice cream to firm up in the freezer for several hours before serving.

One of the best things about this brownie ice cream recipe is how easy it is to customize.

  • Fold in brownie chunks or pieces of your favorite fudge brownie during the last minute of churning.
  • Add shavings of a dark chocolate candy bar to the ice cream mix right at the end of churning.
  • Sprinkle in mini chocolate chips for added texture.
  • Drizzle each serving with warm fudge or serve with chocolate syrup for an over-the-top dessert.
  • Love mocha? Add a teaspoon of espresso powder to deepen the dark chocolate flavor.For an even richer dessert, top each scoop with whipped cream and more brownie pieces.

  1. Why does homemade ice cream melt faster? Because it’s made with real dairy and simple ingredients. Unlike many commercial brands, this recipe contains no corn syrup necessary, no soybean oil, or guar gum here, allowing the creamy texture to soften naturally.
  2. Can I make this without an ice cream maker? For the best texture, I recommend using an ice cream maker. Churning incorporates air while freezing the mixture, giving you incredibly creamy ice cream.
  3. How long will homemade brownie batter ice cream keep? Store it in an airtight container with plastic wrap pressed onto the top of the ice cream. It stays at its best for about two weeks.
  4. Can I add mix-ins? Absolutely! Chocolate chips, chopped brownies, brownie chunks, or even ribbons of edible brownie batter all make delicious additions.
  5. Can I substitute brownie mix? I don’t recommend stirring in dry brownie mix since it contains uncooked flour. If you’d like brownie batter flavor, use an edible brownie batter recipe or simply enjoy the rich chocolate custard as written.

Equipment

  • Ice Cream Maker

Ingredients
  

  • 2 1/2 cups Half & Half
  • 2 cups Heavy Cream
  • 1 tablespoon Vanilla Extract
  • 2 whole Eggs
  • 2 whole Egg Yolks
  • 1 cup granulated sugar
  • 1 cup Hershey’s Special Dark Cocoa or Dutch Process Cocoa
  • 1 cup 60% dark chocolate chips or higher percentage of cocoa is fine

Instructions
 

  • In a large sauce pan combine half and half, heavy cream, and vanilla bring mixture to a simmer over low heat for 10 minutes.
  • With a mixer combine eggs, egg yolks, sugar, and cocoa. Beat for 3 minutes, stopping to scrape bowl once. Mixture should be thick and smooth.
  • Remove 2 cups of hot cream from pan, and ever so slowly drizzle hot cream into chocolate while mixing, until completely combined and smooth. Do not stop mixing while adding hot cream. Drizzle in slowly.
  • Add tempered (warmed) chocolate mixture back into hot cream, while continuously whisking. At this point add in the chocolate chips and let them melt in to the mixture.  Whisk over medium-low heat for 5 minutes or until ice cream mix base becomes thick like pudding. Don not stop whisking. Remove from heat and let cool. Transfer to a freezer safe carton, place in refrigerator until completely cool.
  • Transfer cooled ice cream base to bowl of ice cream maker, turn machine on and let mix until thickened, approximately 20-30 minutes.

Notes

Note: If you do not have an ice cream maker, you can put carton in freezer and stir often, until ice cream becomes hard to stir.

  1. This looks good! BUT, sorry to be so dense, where on earth do the chocolate chips come in?? I have read the recipe and post twice – I see chips in the ingredient list, but not in the instructions…. am I missing it over and over???

        Meanwhile, have you ever tried Mexican Vanilla? It’s spendy but; Oh. My.
        When my friends ask me to bring something to a picnic, or for a bake sale, they ask for my chocolate chip cookies and I truly think the Mexican Vanilla is the key.

            My second bottle came from a gourmet store in a town we happened to pass through.
            Try Amazon – they have every thing!

          2. I just looked on Amazon – I have an 8 oz Bottle of the Blue Truck brand Mexican Vanilla. There are smaller bottles available if you don’t want to go “all in ” on a big one!
