Whole Wheat Pumpkin Oat Muffins

I wanted to share with you a new twist on my Oatmeal Breakfast Muffin.  I was having a my friend Liz over for coffee, Liz is like all healthy and stuff…so I was like OH my Gah what am I going to make for her that would be worthy of her healthy foodieness.  Well I know she loves pumpkin, and oatmeal and she uses whole wheat when ever possible….which I never ever do, but should!   I decided to give  King ArthursWhite Whole Wheat Flour a try, I swear by their Unbleached All-purpose Flour for everything!  And I love their Bread Flour for my bread machine, so I am not surprised that I loved this variety too!  

So anywho the night before Liz was to visit I quick whipped up my new recipe for her.  I left them out to cool on the counter and went to tuck my precious baby giants in to there beddy-byes, and when I returned to the kitchen my muffins where gone!   “KEEEENNN-Nah-eeee!!!!”  Where were they all?  Did Ken put them away for me?  And where was the Hairball?!!

Yes Darling….did you call?  (cause my husband always calls me darlin….NOT.  Deeny….Looscious Sanfred….don’t ask….Lover Girl, maybe but never Darling.)

Where are the muffins I JUST made?!!

Um well…..the Hairball ate them.

What the bleepity bleep bleep! Wah hahah ahahahA…snort snerk.  (To my defense I was recovering from a sinus infection, and Aunt Flow was in town…I was feeling a bit overwhelmed.  And the fact that my stupid dog just ate a whole batch of homemade muffins…pushed me over the proverbial edge!)

What did I do?  What. Did. I. Do.   Well, I’m not proud of it…please don’t call the doggy social services on me, but I got right in the hairballs snout and I said, You had better watch your tail!  Then I kicked his tail out of the house!


I showed him who’s boss.  Yes I did. I could tell he was skeered, really, really skeered!  I don’t think he’ll ever do that again!



I went to bed.  Got up and made a new batch.   I had slept it off.  It was a new day, and I decided I might as well forgive the Hairball.



Who could stay mad at a face like this very long…sheesh!


So here they are…I dare say they are better than the original!  Especially if you love pumpkin, and oatmeal like my gal Liz…I think her little man liked them too!  Do you like bananas?  If you do I’ve got a banana version for you too…and well someone shared that they tossed in blueberries so I gave that a try, and it was quite scrumptious.  These muffins are just plain versatile!

Fruits, nuts, mini chocolate chips?




There they are!  Banana Nut Oatmeal Muffins, my kiddos love it when I pack these in their lunches.

    Okay, this was the perfect laugh to start my week! I just love you…. and am picturing you TRYING to be angry with the Hairball. Oh my gracious…. and we can all relate to dealing with this stuff while dealing with hormones too. 🙂 So glad you and Liz got to hang out!! PS ~ I’m having some neighbor friends for coffee in a week…. totally going to make these!

      These were great, Thanks! For any dieters out there i added up the calories for a batch of 14 muffins, they are 160 each without the toppping. Makes for a ggod breakfast paired with fruit. Also i will freeze for future snacks. Thanks again!

    I used to have a retriever mix who was quite fond of muffins and other non-doggie baked items, too.
    Now, you’re SURE hubby didn’t help eat them?

    He’s such a cutie – you can’t stay mad for long, at such an adorable face. Our other dog is part Belgian Shepherd, and while she doesn’t get up and snatch them, she likely wouldn’t turn them down if they were offered.

      Well the batch mades 20 muffins and we had samples about 8 of them that left 12, twelve! muffins for hairball, muffin papers and all! I can’t believe he didn’t get sick. Silly pooch ; )

    I was eying these muffins on the table when I saw the pic of your visit on Instagram! I love a good healthy muffin, you did good Sheila! 🙂 I want to make these for my kiddos. I just discovered that white whole wheat flour & love it!!

    This is my first visit over here and I’m all over these whole wheat muffins! I bake all healthy and stuff too so I love these. 😉

    And your doggie! Oh my gosh. Every day I wake up and say to my poor husband, “I would love a golden retriever puppy so much.” And then go on to elaborate as to what my puppy and I would do. It’s sad. I really need a dog!

    Anyway, love these muffins but now you have me daydreaming about my future golden retriever puppy. 😀

I love this dog, but Omygersh! the shedding is insane, and everyone who has a golden says the same thing…so you may want to look into a golden doodle…or if the hair doesn’t bother you then, I will cross my fingers you get your very own hairball very soon!       • I actually have really bad allergies in general but I don’t know if I’m allergic to golden retrievers. 🙁 I wish I knew someone with one so I could have a little trial! It stinks, though. I’ve had my heart set on a golden forever. A golden doodle, despite its excellent name, just wouldn’t be the same. We’ll see! Maybe I’m not allergic. 🙂

    Hi muffins look yum! What if i can’t get white whole wheat what could i substitute? Don’t think i can really get any “specialty” flours. Basics wheat,white,bread not sure what other types. Thanks!

    You are so funny, Sheila! I was looking for a new muffin recipee–a healthy one, and here you have it for me!     Just wanted to say that this was a very moist and delicious muffin recipe. I did add cinnamon, ginger, nutmeg and cloves with chocolate chips. Awesome.
