These muffins are for my boys.  They love all things chocolate chip, so I decided to make them an after school treat packed with just that!  They both happily  grabbed a chocolate chip muffin and headed off to do their homework.  I went down a bit later to ask them what they thought.  Younger son replied you need to make those all the time…nom nom nom.  Older serious son barely looked up from his homework to say “more cowbell”. What????More cowbell. What language do you speaketh dear son? Haven’t you ever heard that?  It’s from Saturday Night Live. Nope, you lost me. How do cowbells have anything to do with the chocolate chip muffins? (scowl) You need to You Tube it mom…..youtube (that’s a verb now) “cowbell, Will Farrell”. Okey dokey.

So I youtubed cowbell, Will Farrell, and then I understood what he meant.  Cowbell can also be found on Wikipedia.  Who knew?  Everyone but me!  Apparently “cowbell” is a pop culture catchphrase.  Huh?  Where have I been?  So if you have had your head in a hole like me, here is the video and if you still don’t get it, “more cowbell” means more, more, MORE, MORE! More is better! OK now I get it, he wanted more chocolate chips in the muffins.

  • Butter
  • Sugar
  • Sour Cream
  • Eggs
  • Buttermilk
  • Vanilla
  • All Purpose Flour
  • Baking Powder
  • Salt
  • Nutmeg
  • Mini Chocolate Chips

These muffins are basically my mom’s coffee cake recipe with mini chocolate chips added to them. So easy and they make the perfect muffin; so moist, buttery, and tender.  

Preheat oven to 350 degrees F. Place muffin papers in muffin tin. Now make your batter.

Cream together softened butter (not melted butter) and sugar. Cream until light and fluffy.

Combine dry ingredients in a bowl. Set this aside.

Combine buttermilk, eggs, and vanilla in a small bowl, and whisk to combine. Set aside.

Now alternate adding wet and dry ingredients to the butter mixture. Fold in sour cream with a spatula, or you can blend in slowly with paddle attachment. (I actually always use the paddle attachment, unless I’m making whipped topping or a meringue.)

Add mini semi-sweet chocolate chips and fold them in with a spatula.

Spoon into paper lined muffin tins, and sprinkle with a little more cowbell or I mean more mini chocolate chips.  Bake in a preheated 350 degree oven for 18 minutes or until muffins are just barely brown, and firm when you push down on the middle.

  1. What keeps these muffins so moist?
    The combination of butter and buttermilk creates incredibly moist muffins with a soft, tender crumb. Be careful not to overmix the batter for the best results.
  2. Can I make my own buttermilk?
    Yes! If you don’t have buttermilk, make your own buttermilk by adding 1 tablespoon of white vinegar to a measuring cup and filling it with whole milk until you reach 1 cup. Let it sit for 5–10 minutes before using.
  3. Can I substitute Greek yogurt?
    Yes. Plain Greek yogurt can replace some or all of the buttermilk. The muffins will still be tender with a slightly richer texture.
  4. How do I avoid dry muffins?
    To prevent dry muffins, measure your all-purpose flour carefully, mix the wet and dry ingredients just until combined, and don’t overbake.
  5. Do I need paper liners?
    No, but paper liners make cleanup easier and help the muffins travel well. You can also grease your muffin pan if you prefer.
  6. What’s the best way to portion the batter?
    An ice cream scoop is the easiest way to evenly divide the batter so every muffin bakes the same size.
  7. Should I mix the dry ingredients separately?
    Yes. Whisk the flour, baking powder, salt, and other dry ingredients together in a separate bowl before combining them with the wet ingredients. This helps everything mix evenly without overworking the batter.

Equipment

Ingredients
  

  • 1 cup softened butter 2 sticks
  • 1 1/2 cups sugar
  • 3 whole eggs
  • 1 cup buttermilk or 1 cup whole milk + 1 tsp white vinegar (whisk together ahead of time let set for 5 minutes)
  • 1 tsp pure vanilla extract
  • 3 cups all purpose baking flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp a pinch Nutmeg
  • 1/2 cup sour cream
  • 1 1/4 cup Mini Chocolate Chips

Instructions
 

  • Cream together butter and sugar.
  • In a separate bowl whisk together eggs, buttermilk and vanilla. In another bowl combine flour, baking powder, salt, and nutmeg.
  • Gradually alternate adding wet and dry ingredients to butter mixture until just combined. No need to over mix. .
  • Fold in sour cream. When batter is smooth and all ingredients are incorporated add in 1 cup mini-chocolate chips.
  • Spoon into muffins tins, sprinkle remaining 1/4 cup chips over the tops of muffins. Bake at 350 degrees for large muffins 18 minutes.

Notes

Once these have cooled, you can pack them in zip-loc freezer bags and freeze them for later. The are good for up to 8 weeks in the freezer.

  1. These are so good.. that I am bringing them to my class for parent orientation. Since I teach first grade I made them in mini muffins and they were YUMMMM!!!

  2. Mmmmm! These are the best chocolate chip muffins I’ve ever made! Very moist (dry c.chip muffins is always a concern). It took me way longer to bake them than 25 mins, but well worth the wait! I also accidentally subbed yogurt for sour cream (I’m blaming my lack of sleep since I have a newborn at home!) Still turned out delish. Thank you!
