Easy Caprese Tomato Salad with Toasted Pine Nuts

Nothing celebrates summer quite like a classic caprese salad made with juicy tomatoes, creamy fresh mozzarella cheese, fragrant fresh basil leaves, and a drizzle of olive oil. Whether you use garden-fresh ripe tomatoes, colorful heirloom tomatoes, or the best quality large tomatoes you can find at the market, this simple salad is proof that simple ingredients create unforgettable flavor. Finished with sea salt, freshly cracked black pepper, and either a balsamic reduction or a drizzle of balsamic glaze, it’s a delicious way to enjoy the season’s freshest produce as a side dish, light lunch, or alongside a loaf of crusty bread.

Honestly, this salad is summer on a plate. Here in Michigan, the season for fresh, locally grown tomatoes is relatively short, so you can bet I’m taking full advantage of every vine-ripened tomato while they’re at their peak. There’s simply nothing like the flavor of a fresh, in-season tomato picked straight from the vine.

This Caprese Tomato Salad is one of our favorite ways to enjoy them. I’m not exactly sure when I started toasting pine nuts and sprinkling them over the top, but they’ve become my secret ingredient. They add a subtle nutty flavor and just the right amount of crunch that takes this simple salad to the next level.

I love serving it on its own, as an appetizer or starter, or alongside grilled chicken for a light lunch or easy summer dinner. One of my favorite ways to enjoy the leftovers is piled onto a juicy grilled burger. It turns an ordinary cheeseburger into a spectacular Caprese burger that tastes like summer in every bite.

ingredients for caprese salad on a baking sheet
  • tomatoes
  • fresh basill
  • fresh sliced mozzarella
  • pine nuts
  • extra virgin olive oil
  • balsamic vinegar
  • flaky sea salt
  • fresh cracked black pepper

Making a traditional caprese salad couldn’t be easier, and the best part is that it comes together in just minutes.

  1. Wash and dry your fresh tomatoes.
  2. Add pine nuts to a hot skillet, continue to jiggle the pan while the pine nuts toast. Just when they start to toast up remove pan from heat and let cool.
  3. Slice the ripe tomatoes into 1/4-1/2 inch thick rounds. If using heirloom tomatoes, alternate the colors for a beautiful presentation.
  4. If mozzarella isn’t already sliced in the package, then slice the fresh mozzarella cheese into rounds about the same thickness as each slice of tomato.
  5. Arrange the tomato and mozzarella slices on a serving platter.
  6. Place a whole or torn fresh basil leaves on top of or between each slice.
  7. Sprinkle generously with sea salt or flaky salt and freshly cracked black pepper.
  8. Finish with a generous drizzle of olive oil and balsamic vinegar or reduction.
  9. Last sprinkle the toasted pine nuts over the entire platter.

I can’t share this recipe without telling you about the infamous Caprese Salad Incident. Years ago, I was hosting a few girlfriends for appetizers and an evening of catching up. I had just finished making the most beautiful platter of Caprese salad—perfectly layered tomatoes, fresh mozzarella, basil…the works. Jack, our Golden Retriever, was lying quietly in the corner. Or so I thought. I turned my back for just a few seconds to answer the door, convinced my friends had arrived. Then I heard the strangest sound—a glass platter scraping across the countertop. I spun around to find Jack sitting on his hindquarters with his front paws planted on either side of my gorgeous Caprese platter, happily helping himself to what was supposed to be our appetizer!

Blast you, DEVIL dog!” I yelled.

He looked at me for half a second, then bolted out the door faster than I thought a dog that size could move, licking his chops the entire way. Stinkin’ beast. To this day, I wish I had grabbed my camera before chasing him away. It would have been one of those photos we’d laugh about forever. Instead, all I have is the memory of one very happy dog and one very empty platter.

One of my favorite things about this recipe is how easily it can be adapted. Start with the classic version, then try one of these delicious twists.

  • Caprese Pasta Salad: Toss chopped tomatoes, mozzarella pearls, basil, cooked pasta, olive oil, and balsamic glaze together for an easy caprese pasta salad that’s perfect for picnics and potlucks.
  • Caprese Skewers: Thread cherry tomatoes, mozzarella balls, and basil onto skewers for easy-to-serve caprese skewers that make a great appetizer.
  • Caprese Sandwich: Layer sliced mozzarella, tomatoes, basil, and balsamic glaze on toasted artisan bread for a fresh and satisfying caprese sandwich.
  • Add sliced peaches, strawberries, or avocado for even more fresh flavor.
  • Finish with toasted pine nuts or a sprinkle of parmesan for extra texture.
  • Leftovers can be stored in an airtight container in the refrigerator for up to one day, although this salad is at its freshest when enjoyed immediately.
