Why I love this salad so much
Honestly, this salad is summer on a plate. Here in Michigan, the season for fresh, locally grown tomatoes is relatively short, so you can bet I’m taking full advantage of every vine-ripened tomato while they’re at their peak. There’s simply nothing like the flavor of a fresh, in-season tomato picked straight from the vine.
This Caprese Tomato Salad is one of our favorite ways to enjoy them. I’m not exactly sure when I started toasting pine nuts and sprinkling them over the top, but they’ve become my secret ingredient. They add a subtle nutty flavor and just the right amount of crunch that takes this simple salad to the next level.
I love serving it on its own, as an appetizer or starter, or alongside grilled chicken for a light lunch or easy summer dinner. One of my favorite ways to enjoy the leftovers is piled onto a juicy grilled burger. It turns an ordinary cheeseburger into a spectacular Caprese burger that tastes like summer in every bite.

How to Make Caprese Salad
Making a traditional caprese salad couldn’t be easier, and the best part is that it comes together in just minutes.
- Wash and dry your fresh tomatoes.
- Add pine nuts to a hot skillet, continue to jiggle the pan while the pine nuts toast. Just when they start to toast up remove pan from heat and let cool.
- Slice the ripe tomatoes into 1/4-1/2 inch thick rounds. If using heirloom tomatoes, alternate the colors for a beautiful presentation.
- If mozzarella isn’t already sliced in the package, then slice the fresh mozzarella cheese into rounds about the same thickness as each slice of tomato.
- Arrange the tomato and mozzarella slices on a serving platter.
- Place a whole or torn fresh basil leaves on top of or between each slice.
- Sprinkle generously with sea salt or flaky salt and freshly cracked black pepper.
- Finish with a generous drizzle of olive oil and balsamic vinegar or reduction.
- Last sprinkle the toasted pine nuts over the entire platter.

Funny Story
I can’t share this recipe without telling you about the infamous Caprese Salad Incident. Years ago, I was hosting a few girlfriends for appetizers and an evening of catching up. I had just finished making the most beautiful platter of Caprese salad—perfectly layered tomatoes, fresh mozzarella, basil…the works. Jack, our Golden Retriever, was lying quietly in the corner. Or so I thought. I turned my back for just a few seconds to answer the door, convinced my friends had arrived. Then I heard the strangest sound—a glass platter scraping across the countertop. I spun around to find Jack sitting on his hindquarters with his front paws planted on either side of my gorgeous Caprese platter, happily helping himself to what was supposed to be our appetizer!
“Blast you, DEVIL dog!” I yelled.
He looked at me for half a second, then bolted out the door faster than I thought a dog that size could move, licking his chops the entire way. Stinkin’ beast. To this day, I wish I had grabbed my camera before chasing him away. It would have been one of those photos we’d laugh about forever. Instead, all I have is the memory of one very happy dog and one very empty platter.

Easy Caprese Tomato Salad with Toasted Pine Nuts
Ingredients
- 3 whole beef steak tomatoes
- 8 ounces fresh mozzarella cheese
- 10 basil leaves washed and dried
- 1/3 cup pine nuts
- 1 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil
- sea salt to taste
- fresh ground black pepper to taste
Instructions
- Heat a small skillet over medium heat, place pine nuts in skillet and move around continuously until they start to brown and smell nutty, remove pan to a dish or a plate. Otherwise they will continue to brown in the warm pan and could burn. Do not walk away from this is a step you much keep an eye on.
- Wash and slice tomatoes in to 1/4 inch thick slices.
- Cut mozzarella into 1/4 inch slices.
- Wash and dry one basil leaf for every tomato slice, if the leaves are large and you don't have enough you can cut them in half.
Assemble
- On a flat serving platter with a bit of a lip to hold in juices. (honestly a dinner plate will do!) Layer tomatoes, mozzarella, basil leaves, then drizzle with olive oil, balsamic vinegar, sprinkle with toasted pine nuts and top it off with salt and pepper.
