2wholelemons
1cupzucchini chunks
1cupsummer squash chunks
1/3lbfresh green beans
Instructions
Preheat oven to 400℉. Tear off four 12-14 inch pieces of aluminum foil. Have a baking sheet ready to place fish packets on.
Thaw fish fillets, if frozen. Pat fillets dry with paper towel.
Drizzle olive oil on a piece of foil. (1 teaspoon) Lay fish fillet on oiled foil.
Place whatever vegetables you have chosen to go with your fish around the fish. You will want approximately 1 cup of vegetable per packet.
Drizzle vegetables and fish with more olive oil about a teaspoon. Now sprinkle with salt, pepper, and herbs. (see notes)Place 1-2 slices of lemon on top of fish fillet.
Bring sides of foil together and fold on top, then bring the ends together folding them up and toward the middle so all the juices stay in the packet. Place packets on baking sheet. Place in preheated oven for 15-20 minutes depending on how thick your fillets are.
Notes
Herbs & Spices: I have dill in the ingredient listing but you can use whatever your heart desires. See the Variations section of the post for more ideas. Vegetables: You also have creative license with the vegetables you can add whatever veggies you like or none at all. You can also make separate packets of vegetables if you want them separate from the fish. I would recommend doing this if your making shrimp packets because the shrimp will finish cooking much faster than the vegetables.
