2cupsshredded Smoked Gouda or a Monterey Jack with Bacon
3cupsshredded Sharp White Cheddar
1/2teaspoonMustard Powder
1/2teaspoonfresh ground Pepper
salt to taste
1 12ounceBeerpreferably Ale
4cupsblanched Broccolicut into small pieces (approximately 2 large heads of broccoli)
Instructions
Blanch broccoli, cut into small pieces and set aside.
In a 6 quart pan saute the onions and garlic in 1 tablespoon butter until translucent. Remove onions and garlic to a bowl.
Add remaining 4 tablespoons of butter to the pan and melt. Add flour and whisk until bubbles and begins to turn a caramel color. Gradually pour in milk while continuing to whisk. Stir until sauce becomes a nice thick soup consistency. If it gets too thick add a little more milk.
Add saute'd onions and garlic to white sauce along with cheeses, mustard powder, pepper and salt to taste. Whisk until smooth. Cook for 2 minutes stirring continually.
Slowly pour in beer so that it doesn't foam up. Bring to a slow bowl, then turn down to low and let simmer for 5 minutes. Add in broccoli. Continue to cook on low another 10 minutes.
