A colorful farmers market pasta salad loaded with roasted summer vegetables, feta, olives and fresh herbs, tossed in a bright homemade lemon-balsamic dressing. A delicious side dish for summer cookouts, picnics and gatherings.
1wholesmall summer squashcut in half and sliced into 1/2 inch slices
1wholesmall zucchinicut into small chunks
2cupsred onioncut into bite sized chunks
2cupscherry tomatoes
2cupsgreen beanssnipped and cut into 1 inch pieces
2cupssweet corncut off the cob
1/4cupOlive Oil
1teaspoonSalt
1teaspoonPepper
1/4cupfresh Basilroughly chopped
Dressing
1/3cupolive oil
juice of 1 lemon
1cloveof garlicfinely minced
1/2tspsalt
1/4tsppeppermore if you prefer
1tspDijon mustard
1tbspbalsamic vinegar
1tbsphoney
Instructions
Preheat oven to 425℉
Boil pasta in salted water until its al dente, drain and allow to cool.
Cut up all your vegetables into medium to small chunks, place in a bowl and toss with 1/4 cup olive oil and salt and pepper.
Spread vegetables on baking sheets, making sure that they are not crowded.
Roast vegetables in preheated oven for 20 minutes or until starting to caramelize. This step might take up to 30 minutes.
When pasta and roasted vegetables are cool you can mix them together in a large bowl.
Whisk together the for dressing ingredients in a smaller bowl. Drizzle over pasta salad and stir to coat. When dressing has been incorporated into the salad sprinkle with fresh basil, and give salad another quick stir and you are good to go!
