Easy Three Bean Turkey Soup recipe

This hearty Three Bean Turkey Soup is an easy one-pot dinner made with lean ground turkey, carrots, celery, tomatoes, and three kinds of beans. Full of flavor, filling, freezer-friendly, and perfect for a cozy weeknight meal or sharing with someone you love.

Equipment

  • 1 large stock pot 8-10 quarts

Ingredients
  

  • 2 tbsp olive oil
  • 2 lbs ground turkey
  • 1 1/2 cups spanish onion peeled and diced (aprox 1 onion)
  • 3 stalks celery diced (It's Ok to chop up some of the leaves, they add flavor!)
  • 3 whole carrots diced into small cubes (approximately 1 1/2 cups)
  • 1 tbsp Italian seasoning blend
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 28 ounce can crushed tomatoes
  • 15 ounce can tomato sauce + 1 can of water
  • 15 ounce cans black beans
  • 15 ounce can cannellini beans
  • 15 ounce can kidney beans
  • 32 ounces vegetable or chicken stock
  • 1 tbsp sugar
  • 1 tsp salt

Instructions
 

  • Add olive oil to a large stock pot, mine is 10 quart, turn heat on medium high add ground turkey and cook until brown breaking it up with a meat chopper or a wooden spoon.
  • While meat is browning chop vegetables. Add diced onion, celery, and carrots to pot with meat. Mix together and allow to cook for about 10 minutes or until vegetables are tender.
  • Drain and rinse the beans. Set aside.
  • Go back to the browning meat and vegetables add spices at this time. Allow to simmer for a minute longer. Add tomato sauce (+1 can of water) and crushed tomatoes followed by beans, stock, sugar, salt, and pepper to taste.
  • Turn heat down to low and allow to simmer for 30 minutes.

Notes

Serve with bread, oyster crackers, or tortilla chips.
Slow Cooker: I made this the day before, poured it in my crock pot dish, refrigerated it, the next day I turned my crock pot on low; and let it cook for 4 hours before serving.
