Barley Blueberry and Blue Cheese Bowl

Ingredients
  

salad

  • 3 cups cooked barley, per package directions
  • 1 1/2 cups blueberries, washed
  • 2/3 cup blue cheese crumbles this can be optional if you prefer another cheese feel free to swap it in
  • 1 apple, cut into cubes
  • 2 cups chopped spinach
  • 1/3 cup chopped green onion about 4 green onions cleaned and sliced

dressing

  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 1 tbsp honey
  • 1/2 tsp salt
  • 12/2 tsp black pepper

Instructions
 

  • Cook barley per package directions and let cook. This takes approximately 1 hour 20 minutes.

dressing

  • Add balsamic, oil, honey, salt and pepper together in a mason jar and shake until dressing comes together. You can also whip up in your blender. Or whisk together in a small measuring bowl.

salad prep

  • Wash blueberries, core and chop apple into small cubes, chop spinach and onions.
  • Combine dressing with barley, blueberries, blue cheese, spinach, apple, and green onion. Add more fresh cracked pepper to your liking, and of course more blue cheese if you like!

Notes

Keep in an airtight container in refrigerator for up to 3 days.
Serving suggestions: Serve alone or pair with chicken, pork, add chopped boiled eggs, garbanzo beans, the skies the limit!
