Preheat oven to 450℉. Place one 12x15 inch baking sheet in oven while it preheats. Pan needs to be very hot, don't skip this step
Butter all 16 slices of bread on one side. Be sure that there is an even coat of butter. Sprinkle buttered side with a pinch of Italian seasoning blend.
Place parmesan cheese on a plate, press buttered bread down into the shredded parmesan. Making sure there is an even coating of parmesan sticking to the bread. Place parmesan side down on the second baking sheet. Repeat until all 8 pieces are done.
Spread light layer of pizza sauce on each slice of bread on the pan.
Place one piece of mozzarella cheese on top of pizza sauce, then layer your pepperoni, and top with another slice of cheese.
Pressing 8 remaining buttered slices of bread into parmesan cheese and place them parmesan side up on top of the assembled sandwiches on the baking sheet.
Remove the hot baking sheet form the oven while wearing an oven mitt. Place hot baking sheet bottom side down on top of the sandwiches. Press down firmly, and evenly making sure the hot pan makes contact with all the sandwiches.
Return the stacked baking sheets to the oven. Bake for 10 minutes.Remove from the oven and allow the sandwiches to sit for 5 minutes before carefully lifting off the top baking sheet. You may need to use a metal spatula to help loosen the sandwiches from the pan.
Cut each sandwich in half or quarters. Serve as-is or with a small bowl of warm pizza sauce for dipping.
