Equipment

Ingredients
  

  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup butter softened
  • 3 whole eggs
  • 1 tsp pure vanilla extract
  • 1 1/2 cups all natural peanut butter brands with peanuts only
  • 5 cups old fashioned oats
  • 2 tsp baking soda
  • 1 cup M & M's

Instructions
 

preheat oven to 350°, line baking sheet with parchment paper

  • Add butter and sugars to mixing bowl, cream butter and sugars together until smooth and fluffy.
  • Add eggs one at a time making sure to scrape down bowl after all are added. Add vanilla and peanut butter, mix for about 3 minutes until light and fluffy.
  • Sprinkle baking soda over cookie dough and begin to add oats one cup at a time, until all are added, add M & M's combine well.
  • Using a large cookie scoop (3 tablespoons/ 1.5 ounce) scoop dough out onto parchment lined baking sheets and bake for 12-14 minutes, until slightly browned around the edges. Remove and allow to cool for about 5 minutes before moving cookies to a baking rack. Repeat until all dough is gone.

Notes

Notes:
If dough seems too loose, place bowl in refrigerator for an hour before scooping out and baking. 
Allowing cookies to cool on the baking sheet for at least 5 minutes allows them to continue baking after removing from oven, so if they seem a little gooey yet in the middle when you remove them leave them be and they will be perfect after allowing to set. 
You can also scoop dough out onto baking sheet, place baking sheet in freezer until cookie dough is completely frozen, remove dough balls to a zip loc bag and store in freezer. Remove from bag as needed to bake up fresh warm cookies at any time!
