Beef & Bean Enchiladas ~ Meal Plan Mondays

What makes this meal perfect is that as good as it is the first day the leftovers are twice as good! Layers of corn tortillas, beef and beans, cheese, and red enchilada sauce, this meal comes together in less than 30 minutes!

Well we survived the weekend!!  It was super fun and my kiddos all had a great time at Homecoming; and we ended the weekend by having our good friends from our life (small) group over for soup!  We had taken a break for the summer because of everyones busy schedules so it was our first time together in three months needless to say we DID NOT run out of things to talk about!!  It’s good to be doing life together again!  I need to tell you about our “life” group sometime……

I made Roasted Tomato Basil Soup and Creamy Chicken and Potato Soup and everyone else brought the extras. And guess what I was too busy catching up with everyone to think about getting any pictures!! Oh Snap!

I always make a giant batch of Roasted Tomato Basil Soup this time of year, when the tomato plants are heavy with tomatoes and you can get a 1/2 bushel for $10 at the famers market!  If we don’t eat it all gone, I freeze the left overs for a rainy day.  This soup can easily be made a day or two ahead of time and warmed up.  My kids love this soup!  {bell ringing} Soups on!!!

This recipe is one that my oldest daughter asks me to make weekly!  I don’t make it weekly, but I’m sure she would love me more if I did!!  This week when I make this I’m going to use my big slow cooker and double the recipe, and then freeze the leftovers for another day!  Back pat 😉

So that’s for sure what’s cookin’ in my kitchen this week, I may throw together another meal or two, but my mom is in town so she may be taking over the reigns in the kitchen a night or two, I know that my kiddos have already requested grandmas fried chicken, with mashed potatoes and country gravy!
