BBQ Chicken and Pineapple Quesadilla Pizzas

Azteca Prize Winner is number 32 Jeffrey!

Jeffrey :

I create a meal plan at the beginning of the week and if I know a dinner will take longer to make than we have because of sport or other commitments I make what I can ahead of time. I am a firm believer in the home cooked meal, I haven’t ate at “McBurgerBell” in over 20 years! My kids get to go there when they stay with their grandma and I am fine with that, its only a couple of times a month.

I love that you use a meal plan.  Planning ahead and looking at what your week will bring is always the best way to stay on top of the almighty schedule!  Jeffrey shoot me an email with your full name and mailing address and we will get your prize right out!  Have a great week!

  1. Keep bags of cooked meat, like ground beef or shredded chicken, premeasured in your freezer for quick quesadillas, soups, pizzas, or tacos.
  2. I always like to keep bagged salad in my crisper it’s prewashed and ready to go add a little cheese, some croutons, your favorite salad dressing and you’ve got some color in your diet.  Or use it to make a quick wrap: chicken, cheese, lettuce, ranch dressing, Voila!
  3. I always keep flour tortillas on hand.  I can quickly make my kids quesadillas, tacos, breakfast burritos,  a healthy wrap sandwich, or even pizza!  And if you have a night that is too busy to sit down a quesadilla, wrap, or burritos is easy to eat on the go.

BBQ Chicken and Pineapple Quesadilla PizzaBBQ Chicken and Pineapple Quesadilla pizzas are basically all of our families favorite things smashed into one, quesadillas, pizza, and BBQ, BAM!  The cheese quesadilla becomes the pizza crust, add the bbq sauce, chicken, pineapple, and any other toppings you like.  I added jalepenos and red bell peppers to mine.  You could top them with diced avocado and some chopped cilantro after they come out of the oven adding more good for you fresh ingredients!

As a working mom, fast meals are always the case at our house. My tip would be to plan meals ahead of time and always have the essentials on hand like cheese, cut up fruits and veggies, defrosted chicken breasts, tortillas or naan, salads, pre-cooked rice, etc. This makes it easier and faster to get dinner on the table to a bunch of hungry kids/hubby!

Sheila, this looks great! My best tip is the same as Sylvia’s, having a plan is key! When I’m feeling unmotivated in my planning I give each night a theme (pasta, mexican, sandwich night, etc). Then it’s easier to think of something to plan.

P.S. We had cheese and crackers for dinner last night, thought of you!

My best tip is Make it fun for kids to try new fruits and veggies! Let them pick out a new fruit or vegetable in the grocery store each week, and figure out together how to cook or prepare it in a healthy way. This makes being healthy easy!
