Cowboy Cookies

I was in the mood to bake the other night so I asked my son who happened to be in the kitchen what I should make, usually I get an Idunno, but he shot back with make the chocolate chip cookies you always used to make when we were little, the ones with the butterscotch chips.  I had to think for a minute and then I remembered.  Did they also have oatmeal in them I asked, and peanut butter?  YUP I think so, he answered.

I seem to have eras of chocolate chip cookies.  I find a recipe and I make it to death, then I find another and do the same, I think I need to loop back and revisit some of the oldies but goodies!  No pun intended. 😉

 

Cowboy Cookie ~ a peanut butter oatmeal chocolate chip cookieWhy are they called Cowboy Cookies?  I really have no idea.  This was a goto recipe of my Moms, she made this recipe often.  When I was a kid I always envisioned a cowboy on a horse saying HI-ho Silver away with a cookie held high in his hand as he trotted away across the open plain.  Maybe they are called cowboy cookies because….UM I really have no idea, so lets just stop while we’re ahead  and move on to more important things like sharing cowboy cookies with friends.

 

Cowboy Cookie ~ a peanut butter oatmeal chocolate chip cookieSo I made the cookies, and I had them out on a rack on the counter to cool, I stepped into my office to get the recipe on my blog, so I would remember to share it.  I heard my oldest son in the kitchen, then he said Mom I’m leaving to meet friends, Ok I said.  I watched him drive away. Then heard him drive back in, run in the house slam a few kitchen drawers and rustle around for a minute; then I watched out the window to see what he was heading back to his truck with.  I couldn’t see.  So I called him….I know he was driving, but our driveway is long and I knew he wouldn’t be out on the road for a minute.

him “mom I’m driving my truck not my moped”

Be still my heart.  My kid decided to share food with his friends family, without my prompting.  All on his lonesome he loved on others with the gift of food!  My work here is done people.  Here’s the cookie recipe.  Make them.   Go forth and multiply.  I’m not sure why I said that, it just seemed to flow.

    These look utterly perfect. Chewy centers, crispy edges and I love cookies that have everything I love in one- peanut butter, chocolate AND butterscotch!

    I’m with Kelly – these look lovely!
    Whenever we have a new neighbor move in or someone gives me vegetables from their garden, they get cookies or granola – or something. Sharing is caring, isn’t it?

    “Go forth and multiply!” I just about snorted my drink out my nose when I read that! haha! Quoting right from Genesis 1:28 …almost… lol!!! Oh, how I miss you, Sheila!!

      It is a wrap! LOL that silly newsletter is so fickle thats the ButterMilk Ranch Chicken Wrap I posted it in June. Its super yum!! I bet these cookies would go great with it for a picnic!! ;D Thanks for asking. XO Sheila

    I just made this recipe, but I made them smaller . I ended up with 6 dozen cookies about the size of a regular sized cookie. They are absolutely delicious !! We couldn’t stop eating them ! And they do come out perfect every time ~ ! And clean up is a breeze using parchment paper ( I already use it for everything from making quick breads to baking potatoes , etc . ) From my family to you …. THANK YOU FOR THE RECIPE !

    THANK YOU!! I made the Cowboy cookies for tonight’s treat after pizza… huge success!! Those Butterscotch chips just gave those cookies a nice round flavor and the texture was wonderful. One of our character little boys (my sister’s 6 year old grandson) wanted to know everything that was in the cookie and then I told him the name and he thought I made good cookies for cowboys and him. Tomorrow will be the final day for the reunion so we’ll see if I remain his favorite. Thanks, Shelia

    Thank you so much for this recipe, I made them tonight for a family picnic tomorrow, however a large number have already been eaten while still warm! It’s such an easy cookie to make but they turned out beautifully. I will definitely make them again, but this batch will be enjoyed on our day out tomorrow in the English countryside so it’s doubtful there will be any cowboys to be found 😉
