Slow Cooker Chicken Lettuce Wraps

Slow Cooker Chicken Lettuce Wraps is the perfect easy meal for your busy schedule! All you need are a few simple ingredients for this delicious recipe. A crockpot or an instant pot can be used. I give you multiple tips and substitutions below. Lets get cookin’!!

This recipe for Asian Lettuce Wraps reminds me of the popular PF Chang’s lettuce wraps. This light meal is not only tasty and easy, it tastes even better the next day! It is also perfect because it only takes me about 15 minutes to get it prepped and in my slow cooker; then I just walked away! It is by far one of my favorite slow cooker recipes!

  • olive oil or sesame oil
  • ground chicken
  • red bell pepper
  • carrots
  • garlic cloves
  • hoisin sauce
  • soy sauce
  • black pepper
  • water chestnuts
  • rice
  • green onions
  • best kind of lettuce: bibb lettuce, iceberg lettuce, butter lettuce
  • garnish: chopped cilantro, toasted sesame seeds, chopped peanuts

This recipe has been adapted from the cookbook America’s Slow Cooker Revolution Volume 2:Easy Prep Addition. The instructions for the crock pot cooking method are listed below and the instant pot method is in the notes of the printable recipe card.

  1. In a large skillet heat olive oil over medium high heat add ground chicken and garlic to the pan. Cook until completely cooked through and there is no more pink in the meat. Spoon off most of the excess juices from the cooked meat.

2. Place cooked meat into crock pot, add diced red bell peppers, shredded carrots, hoisin sauce, soy sauce, and black pepper. Turn crock pot to low and cook for at least 2 hours, 1 hour on high. (I have cooked this on low for as long as 6 hours and it did not dry out.)

3. 15 minutes before you are ready to eat add in chopped water chestnuts and rice, allow it to heat through and serve with washed, dry lettuce leaf on the side.

4. Set out garnishes if you like, but honestly you don’t need to have a bunch of garnish if you do not have time. This recipe has so much flavor, no one will miss them.

  • Protein Substitutions: This recipe is very versatile when it comes to the protein. I have used ground turkey, ground pork, and shrimp. If you are using shrimp you want to let them thaw remove the shells and tails, shop them up into very small pieces, and brown them with the garlic as you would the ground chicken. I don’t normally think of beef as a protein I would use in asian cooking, but I do not know why it wouldn’t work. Let me know if you try it!
  • Sauce Variations: Low sodium soy sauce can be used in replacement of regular soy sauce. I have also used 1/2 cup bottled teriyaki sauce in place of the hoisin and soy sauce. You should be able to find any of these ingredients in your local grocery store.
  • Spice it up a bit! We like our food spicy so I often will add 1/2 teaspoon of red pepper flakes to this recipe. Also our family always has a bottle of sriracha, or some sort of hot sauce on the table. Add this to the top when serving.
  • Garnish: I like to garnish with toasted sesame seeds, chopped peanuts, chopped cilantro, or as I stated above a nice squirt of sriracha. If pickled red onion is your thing this is also delicious on top of your chicken lettuce wrap.
  • Asian Twist on Taco Bowls: Leave out the rice and serve the protein over rice, with all the garnish toppings on the side for people to add as they like. Get creative! You could add bean sprouts, chopped lettuce, chopped Thai basil, and chopped cucumbers just to name a few fun ingredients!
  • Leftovers: The leftovers from chicken lettuce wraps are so good! This is the perfect meal if you are meal prepping. Store in an airtight container and enjoy it for a couple days. You can take it for lunch. Eat it for a couple nights in a row. Add it to another meal as a starter. If you do not like to eat the same meal multiple times in a week the leftovers freeze really well, for a future meal!

Ingredients
  

  • 1 tblsp olive oil
  • 3 pounds ground Chicken
  • 2 cloves Garlic minced
  • 2 Red Bell Peppers cored and chopped fine
  • 1 cup shredded Carrots
  • 1/4 cup Hoisin Sauce
  • 4 tblsp Soy Sauce
  • 1/2 tsp Pepper
  • 8 ounce can sliced Water Chestnuts rinsed and chopped
  • 2 cups cooked Rice
  • 3 Green Onions sliced thin
  • 2 heads Bibb Lettuce

Instructions
 

  • Add olive oil to skillet over medium high heat add chicken and garlic saute' until chicken is no longer pink, about 5 minutes. Drain off liquid and transfer mixture to slow cooker. Stir in bell pepper, shredded carrot, hoisin, soy sauce, salt and pepper. Cover and cook for 2-3 hours.
  • Stir in water chestnuts and rice and let sit until heated through about 15 minutes. Stir in green onions and season with more salt and pepper if needed. Separate Bibb lettuce leaves, serve by spooning chicken filling into lettuce leaves like a taco.

    1. If you go to caloriecount.about.com and copy past the ingredients in it will calculate it easily for you! I did and it was about 500 calories a serving.

    I either make Root Vegetable Tagine or salsa chicken in my crockpot. I use it atleast once a week and it might be my BFF : )

  10. I used my crockpot just 2 days ago for what I call Fake Rotisserie Chicken. First, I crumble 3-5 sheets of foil into balls and place it on the bottom of the crockpot. I very liberally sprinkle seasoned salt all over a whole chicken, then place the chicken on top of the foil (to keep it from sitting in the juices. My crockpot doesn’t have a rack). Cook 4-5 hours or until done. I also use it for roast and Beef Burgundy.

    First of all I have to say I really enjoy your blog! I also love my roaster (I have 2 and sometimes they are both in use at the same time!). I have so many favorites, but my families latest favorite is Creamy Italian Chicken. It’s so easy! That is what I love about using a roaster, it takes 10-15 minutes to prepare and then let the roaster do the rest!
    During the summer my family goes camping in Charlevoix and you better believe that the roasters are packed. Between my mom and my sisters, we have 5 roasters! The grand kids favorite (there are 13 of them), is when Grandma makes boiled dinner, aka a roast with carrots and potatoes.

    1. I hear ya! slow cooker meals are great for team meals too! I use my big 7qt when it’s my turn to feed the basketball team or the volleyball team.

  21. I frequently make stuffed chicken breasts in my crockpot. I teach school and it is a great “comfort” meal at the end of a long day!

      1. Sadly enough, I buy them already made at our local Lancaster County Yoder’s store. They are just chicken breasts stuffed with a bread stuffing made out of bread cubes, onion, chicken broth, egg and celery. I place them in my crock pot and dump a cream of chicken soup and about a cup of sour cream (mixed with the soup) ….I put them on low for about 7 hours. I don’t have a medium setting I just have a high low and keep warm. So you might want to adjust the heat pending on your crockpot. You don’t want them to dry out!

  24. Vegetable chili … I toss in a whole lot of vegetables and one lb ground beef. I also use some refried black beans. It’s a favorite with the whole family.

  27. This chicken looks so good! My kids are crazy about rice, so I am pinning it and will try it that way. I love my slow cooker. I make soup in it at least once a week in the winter, and it’s my favorite way of cooking chicken. If I don’t know what to make for dinner that night, I will just throw some chicken in there (legs, thighs, breasts, whatever I have), and dump in whatever kind of sauce or marinade I can find in my pantry.
