Eggo Nutri Grain Whole Wheat Blueberry Waffles!?!
I think not! And outside of the sugar and butter…which who can live without those two?…this dessert is, in my book, healthy, and quick and easy! Double whammy!!
Top this quick and easy, healthy dessert off with Breyers Vanilla Ice Cream and there ain’t nothin’ better! If I do say so myself. 😉 My 4th grader agrees, she had two heaping bowls of it for dessert, and then the left overs for breakfast!
Preheat oven to 375 degrees. Cut 1 box of Eggo Nutri Grain Whole Wheat Blueberry Waffles into small squares, layer half in the bottom of a baking dish.
Next layer half of the apples and blueberries over the waffles sprinkle with half of the brown sugar and butter and repeat the layers.
Drizzle maple syrup and water evenly over the dessert. Cover with foil and place in a 375 degree oven for 30 minutes, then remove foil and allow to make an additional 20-30 minutes or until dessert is crispy around the edges and apples are soft.

I have to tell you that I have had so much fun coming up with new ways to prepare waffles for my family. My kiddos loved it too! It was like a great adventure for them. Maple Blueberry Apple Brown Betty
1 box Eggo Nutri Grain Whole Wheat Blueberry Waffles
1 cup Blueberries, fresh or frozen
2 Granny Smith Apples, peeled, cored, diced
3/4 cup Butter, 1 1/2 sticks
2/3 cup Brown Sugar
2 tablespoons Maple Syrup
1 tablespoon Water
Preheat oven to 375 degrees.
Cut Eggo Nutri Grain Whole Wheat Blueberry Waffles into small pieces. Place half in bottom of a baking dish. Next layer half of the blueberries, apples, butter, and brown sugar over waffle pieces. Repeat making another layer with remaining ingredients. Combine water and maple syrup together in a measuring cup drizzle over dessert. Cover with foil, place in oven for 30 minutes remove foil and continue to bake for another 30 minutes. Remove from oven and serve warm with Breyers Vanilla Ice Cream!
Note: If you do not have real maple syrup on hand you can replace it with whatever breakfast syrup you have.
