Cobbler luv

I do luuuv me some cobbler.  Any cobbler will do.  It doesn’t have to be fancy, or purdy, or dolled up.  I’ll take my cobbler any ol way!  I decided to take a look around and see how others made their cobbler.  A little cobbler research if you may.  It was hard work, but somebody had to do it!  What I found was that there are somewhere near 1 gatrillion versions of cobbler.  Sweet, savory, spicy, crumbley, flakey, moist, I suspect there is a correlation between where one lives and how one makes cobbler.  I couldn’t find any hard research on it, but I believe it to be true.

Um no…..

cob bler [kob-ler]  a deep-dish fruit pie with a rich biscuit crust, usually only on top.

There that sounds more like it.  Except for that’s not what we called cobbler.  My family would call that dumplings.  Our cobbler consists of a buttery pie crust spread haphazardly in a 9×13 baking pan, with fruit on top of that, then the crust folded over the top, then a crumble crust on top of that.  That’s what my people call cobbler.

That’s the cobbler I grew up on.  I will share it with you soon.

    The cobbler gobbler! Ha! I am the lazy cobbler. The last one I made (which was delicious) was a big can of peaches with about 3 sliced fresh peaches and a box of dry yellow cake mix poured on top with one whole stick of butter cut up on top with a little of the can peach juice. It was dynamite. Other than this lazy one, I also have an even lazier version which is courtesy of Mrs. Smith (the one in the box). Its surprisingly good.

    Not long after we mover to the Pacific Northwest, my sister gave me a recipe for a “creeping crust blackberry cobbler”. It is delicious but overly sweet. Now I make it with a lot less sugar — test the berries before adding the sugar. The dough is on the bottom of the dish and the berries are poured over the top. As it bakes, the crust literally creeps up the sides of the dish and over the top! As the berries are usually very juicy, always place on a baking sheet — voice of experience here!!
