Sausage Egg Sandwich

I now have two teenagers living under my roof.  In four years I will have four teenagers under my roof.  During that time if you are unable to locate me, you might want to check the darkest corner of my home, there you will find me curled up like a cheerio and sucking my thumb, making strange grunt/humming noises.  If you are the lucky one to find me in this state, please pick me up by my stretchy pants and smack me hard across the nogin.

Today we are celebrating our youngest Adoption Day.  She’s nine.  We brought her home when she was a itty bitty four week old babers.  That day is etched in my memory like no other…..well I guess like three others, but it was a bit more emotional on many levels.  The toddler stage was very exhausting….four kiddos under five.  While I was trying to reign my kiddos in one Sunday morning after church,  well seasoned momma, told me that if I thought this was hard just wait until they’re all teenagers.  I remember at the time, thinking sheesh lady what kinda thing is that to say.  I can’t wait till they are all old enough to fend for themselves.  BAHAHAHA BAHAHAbahahahhahabhahah BA HA AH AHA HAHA hahah ha (That’s me laughing insanely at my ignorance and lack of foresight).

I’ve got some good kids I really do.   It’s just that now I can look back on the well seasoned mothers statement and say, “I GET IT!”.  No one has drivers licensces yet, so I am constantly transporting.  Although I am a ardent fan of the bicycle and ride-sharing.  If not for those two alternatives I would be in my van nonstop.  I should have taken a picture of my sons face the first time I told him this summer to take his bike.  [Imagine a brown eyed boy with his jaw hitting the floor, his eyebrows furrowed as if to say “are you crazy woman”]  He quickly found out I am crazy and taxi driver is not in my job description.  I also think that as teenagers they really need me more now than they did when they were little….ugh.  Being a teen.  Lord please never make me go back there again.

So what does all this have to do with Sausage Egg Sandwiches? GOOD QUESTION!  Teenagers eat.  Teenagers eat alot.  Teenagers eat at all hours and non stop.  Did I say teenagers think money grows on trees and stopping at fast food restaunts at all hours of the day is free, and expected?  Can we stop at Wendy’s, Qdoba, McyD’s?  The funny thing is we have never been a family that eats at fast food restaurants. So why now do they think that filling their bodies with greasy calorie ridden food is the norm in this family?  That’s why this summer I started trying to make them their favorites at home.  And the sausage egg mcmuffin at McyD’s is my  oldest sons favorite.  So if you have a teenager that enjoys a McMuffin and thinks dollahs  grow on trees, well then this recipe is for you my friend!

Sausage Egg Sandwichs

serves 6
1 pound Breakfast Sausage, made into 6 patties
6 slices American Cheese
1 package English Muffins
6 Eggs
3 tablespoons Butter

Make six sausage patties from one pound of breakfast sausage.  Feel free to use any flavor of sausage you like.  I used savory sage because it was what I had, it worked just fine.

Squish the patties down, get them nice and flat, and browned around the edges.

 

Drain sausage patties on paper towel.

Toast english muffins.

 

Using 1/2 tablespoon of butter, fry egg in a non-stick frying.  Break the yolk, and scramble slightly.  Use the spatula to reign the egg in, so it ends up in a nice compact circle for your english muffin.

When the egg is almost done toss a slice of american cheese on top, so that it melts ever so slightly.

Now assemble.  English muffin, sausage patty, egg plus cheese, add the english muffin top, and there you have it better than the restaurant version.  That’s what my son says.  And I have to agree.

For a short cut, I fried up all the sausage, drained it on paper towels, let it cool, then stored it in a zip lock bag in the refrigerator.  That way when my son wants a Sausage Egg Sandwich it saves me a step.

Add a few breakfast potatoes and a slice of melon for a great dinner alternative.  I hope you enjoy.

    I really enjoy reading your blog, I laughed out loud on this particular one. I can so relate to living in a teenagers world. I have to say that most of the time I feel as though I am trying to survive on foreign turf. Two things I know, somehow, someway we will make it through this time in our lives and I have a new appreciation for my mom every day. I figure if she survived raising 4 girls, there must be hope.
    We too as a family make these great breakfast sandwiches , we even make them for dinner sometimes!

  3. I have to admit..I am terrified of the teenage years. Mostly because my mamma has been praying that my girls are just like me! Not nice MOM! So, because you will have been through it with three of your own and feel lonely without all the chaos around, I will be sending my gals to your house. I would prefer to have them back when you have them all straightened out and have the hormones in line….say by young adulthood. Love this recipe…great choice if I had a few more minutes in the morning but I do love the ease of this recipe for a dinner on the go!!! Thanks for sharing your heart and your recipes!

    If you ever want a real doozy of a cooking challenge, come cook for Jake. Not only is he uber picky, he has autism-related oral aversions PLUS he’s allergic to tree nuts, peanuts, corn, soy, oat, wheat and apples. Good times!

  6. My kids LOVE chicken nuggets (they are 6 and 3) and I am in search of a recipe for homemade ones that taste as good as chick-fil-a. Any ideas? Most of the time they are happy with cheese burgers, and homemade is so much better then fast food.

    I am making these breakfast sandwiches this week for dinner, thanks for the great idea!!

    1. Oh Chicken Nuggets are a hard one. My kids love friend chicken so I have done it with the boneless chicken tenders, but anyway you look at it they are just plain unhealthy. But oh so yummalicious!
