FRESH strawberry PIE

Oh, yeh baby that’s what I’m talkin’ bout! The only thing that this is missing is the homemade fresh whipped cream. But I am trying to cut back these days. Saving up my calories for my Ranch visit. WHAT?! You didn’t know I was going to visit the Pioneer Woman next week. You better take a moment and read all about it.

This recipe is my mom’s. She made a gagillion of these pies every spring. I swear when I was a kid I probably carried my weight in strawberry pies into potlucks.
This is a fool proof recipe. And it is always a hit. You should make it at least 2 hours before you want to eat it.

Fresh Strawberry Pie
1 cup water
1 cup sugar
1 3oz. box of Strawberry Jell-O
3 tablespoons of cornstarch
1/2 cup of water
4-6 cups fresh strawberries
1 pre-baked pie crust

Put the 1 cup water and 1 cup of sugar in a saucepan bring to a boil.
Mix the 3 tablespoons of cornstarch with the 1/2 cup of water cold water.
Whisk the cornstarch mixture into the boiling sugar water.

Whisk constantly until it become thick. For about 3 minutes.

Then whisk in the Jell-O and cook for a minute longer. Remove from the heat and let cool for about 15 minutes.

While the strawberry glaze is cooling you can clean, dry and cut your berries. I usually cut up about two cups of the strawberries and lay them in the bottom of the crust then mix the remaining 2-4 cups in with the cooled glaze.
The original recipe calls for just 4 cups of strawberries, but I have a hard time sticking to that so that’s why I say 4 -6 cups. But really anymore than 6 and the pie doesn’t hold together well. So control the urge to get out of control with the berries.

Then pour the berries with glaze into the crust.

Oh my…scrump-dilly-i-cious!
That is one of my dad’s famous sayings.
Refrigerate for at least 1 hour before serving. You can make it a day ahead of time.
But beware it may not last till the next day. Cover it with plastic wrap so that it doesn’t pick up the tastes of your onions or what ever else you have that stinks in your fridge.

Someone recently commented that they couldn’t figure out how to download my recipes and print them off. Well, at the moment I don’t have a handy recipe card built into my blog….not even sure if I can do that on blogger. I am praying that sometime soon I will be able to have the capabilities to let you all click and print out my recipes if you want to. For now you must use the old pen and pad of paper copy method.

    I saw the crust is store bought, but meant to ask if you had a good homemade recipe for crust that works well with the Strawberry pie.
